Cabernet Franc IGT
- Grape varieties: 100% Cabernet Franc.
- Refinement: in steel tanks for 4-5 months.
- Bottle aging: 4-5 months.
- Aroma: aromas of red fruits, blueberries and blackberries with grassy undertones.
- Palate: full and persistent yet elegant and refined.
The grapes with their stalks removed are placed in the fermentation tanks where maceration starts; this consists in cooling the grapes for 3 days and then leaving them to ferment at 22-24°C, stirring several times per day. Malolactic fermentation is also implemented using the co-inoculation technique. Maceration continues for a total of approximately 10-12 days.

Pairings
Its assertive yet refined character make Cabernet Franc the perfect accompaniment for grilled meats and pasta dishes with wild foul or game sauces. It also beautifully expresses its qualities when paired with mature cheeses. Recommended serving temperature: 16-18°C.
Historical background
Cabernet Franc most probably originated from the Pyrenean side of Spain from where it travelled to Bordeaux in France with some pilgrims and from there to the Loire which is now considered to be the ideal place for its cultivation from a climatic viewpoint. It is one of the wine varieties typical of Bordeaux: together with Merlot and Cabernet Sauvignon it is used to make the so-called “Bordeaux Blend”. When savoured by itself, it unleashes all its distinctive strength and frankness, from which its name is derived. Friuli Venezia Giulia and Tuscany are the regions where Cabernet Franc is most widespread in Italy.
