Chardonnay IGT

  • Grape varieties: 100% Chardonnay.
  • Refinement: in steel.
  • Bottle aging: 2-3 months.
  • Aroma: fruity notes of ripe apples and bananas with lightly toasted nuances.
  • Palate: saline, it stands out for a pleasant fullness; silky and balanced thanks to the right proportion of acidity and softness.

The stalks of the grapes are removed, after which they are gently pressed. Alcoholic fermentation of the clear must is then started at a controlled temperature, between 14 and 16°C. Refinement takes place in steel tanks where “batonnage” (French for stirring wine lees) is periodically performed.

Pairings

Chardonnay pairs beautifully with fish, molluscs and crustaceans. Thanks to its acidity it goes very well with savoury foods such as cured meats and mature cheeses. Excellent with pizza, either Margherita or with buffalo mozzarella and tomatoes. Best appreciated when served at a temperature of 10-12 degrees.

Historical background

Chardonnay is made from the white grapes of the homonymous vine, originally planted by the Cistercian monks of the abbey of Pontigny in France. It started to spread all over the world in the 19th century. It is named after the homonymous location of Mâconnais, a natural region in Borgogne.

Genetic research reveals that it was produced by the spontaneous hybridisation between Pinot Nero and Gouais Blanc, a Slavic grape variety, probably in the Carolingian era.
