The grapes to make the basic wine on which the Spumante will be developed must be collected in advance because their acidity must be kept high to guarantee the right freshness. The harvested grapes are lightly pressed. Alcoholic fermentation of the clear must is then started in temperature-controlled steel tanks. At the end of the fermentation process, the basic wines for Spumante are stabilised and transferred to a pressure tank for a second fermentation.

Prosecco is excellent as an aperitif, served with fish-based first course dishes, hors d’oeuvres and street food. Its low alcohol content makes it suitable for consumption at various times of the day. Since it is not a sweet wine it should not be paired with desserts. Best served at 6-8°C.
The basic ingredient of Prosecco – a wine dating back to the beginning of the 16th century – is the white Glera grape variety.
Its original geographic location – which gives this wine its name – is the Prosecco Castle near Prosecco, which now belongs to the city of Trieste. Its production in these areas became less and less common in the centuries that followed while it become increasingly more widespread on the hills of Conegliano, Asolo and Valdobbiadene and in the area around Treviso.
