Ribolla Gialla ferma IGT

  • Grape varieties: 100% Ribolla Gialla.
  • Refinement: in steel tanks.
  • Bottle aging: 2-3 months.
  • Palate: delicate hints of white flowers and light notes of fruit and green apple.
  • Gusto: dry and slightly acidic, fragrant and complex, very inviting.

The stalks of the grapes are removed, after which they are gently pressed. The clear must is then fermented at a controlled temperature, between 14 and 15°C. Fermentation and refinement take place in steel tanks with periodical stirring of the lees.

Pairings

Thanks to its rounded palate, still Ribolla Gialla is the ideal accompaniment for seafood dishes.

It pairs exceptionally well with fried fish thanks to its acidic content which “cleanses” the palate without overpowering the characteristics of the dish. Excellent as an aperitif, it also pairs beautifully with mild cheeses and vegetables. Best served at 8-10°C.

Historical background

Ribolla Gialla is a white grape variety originating from Friuli Venezia Giulia. It is believed that its name hints at what used to happen years ago during the wine-making process before they learnt how to control the temperature. Due to the high quantity of malic acid used by bacteria for malolactic fermentation, the must began to boil which is why they called this wine “Ribolla” (which means boiled or fermented).
